Matcha cookies with white chocolate chips

1ST STEP
Pre heat the oven to 180 degrees celcius.

STEP 2
Brown your butter. Heat your butter over medium-high heat until it turns golden in color. Place butter in a heatproof bowl to cool. As the butter cools, it will darken.

3. STEP
Combine flour, baking powder, salt and matcha powder in a medium mixing bowl. Mix well and set aside.

STEP 4
Next, add white sugar and brown sugar to your butter. Shuffle to combine. Once well mixed, add eggs and vanilla. Whisk everything together. Blend until light and creamy in texture (~1 minute). This is the secret to a crunchy, juicy biscuit.

5. STEP
Once the wet ingredients are well mixed, slowly add the dry ingredients from step 3. Mix with a spatula until a green dough forms.

6. STEP
Add the white chocolate chips and mix until well incorporated.

STEP 7
Let the dough rest in the fridge for 30 minutes.

8. STEP
Cover 2 baking sheets with parchment paper. Use a 3 tablespoon (50ml) ice cream scoop to scoop cookie dough onto baking sheets. Cookies should be spaced 4-5 cm apart.

9. STEP
Bake for 9-11 minutes.

STEP 10
Allow the cookies to cool for 10 minutes before placing them on a cooling rack.

STEP 11
Allow the cookies to cool for 15 minutes before serving.

250g all-purpose flour
1 tsp baking powder
0.5 tsp salt
5 scoops of MatchaTherapy™
227g unsalted butter
100g granulated sugar
220g brown sugar
1 tsp vanilla extract
2 room temperature eggs
180 g white chocolate chips
