MatchaTherapy™ White Chocolate Bark (Matcha White Chocolate Bark with Coconut and Raspberries)

1ST STEP
Heat a small saucepan with 3 inches of water over high heat until the water is almost simmering. Reduce the heat to get that mere simmer. Place a large metal bowl over the pot of water and add ¾ of the chopped chocolate. Make sure no water or steam touches the chocolate or it may set.

STEP 2
Cook, stirring frequently, until the chocolate has melted (40°C). Remove the bowl from the heat and add the remaining chocolate. Stir until all of the chocolate has melted. Sift the matcha over the bowl to ensure there are no lumps and stir until the streaks disappear and the chocolate is a uniform color.

3. STEP
Stir half the raspberries and half the coconut into the melted chocolate and pour onto a pan lined with baking paper. Spread the melted chocolate over a 10" x 10" square and sprinkle over the rest of the raspberries and coconut. Gently press the toppings into the chocolate so they stick.

STEP 4
Now let the bark cool for 2 hours at room temperature or 20 minutes in the fridge before cutting into 16 pieces. Serve at room temperature.

INGREDIENTS:
500g high quality white chocolate, finely chopped
3 tablespoons of MatchaTherapy™
½ cup freeze-dried raspberries, lightly mashed
⅓ cup unsweetened coconut flakes or shredded coconut
